While a sommelier searches for the perfect wine, this man hears a different calling: that of a schmear of cream cheese -- he calls himself a "schmelier." He practices his craft at Philadelphia, where he says only the freshest milk and finest ingredients are used. He will not stop until perfection is achieved.
