Daniel Martin from Blue Hill at Stone Barns surprises a couple of foodies with a zucchini carbonara meal. He is followed by another chef who brings a second dish made from the scraps. For the third course, the farm director swings by with a basket of leftover zucchini vines, which are used to make zucchini stem pasta. The foodies are thoroughly impressed and the chef pauses to ask them what they think can be made from the lemon peels on their counter top. The Natural Resources Defense Council encourages you to cook, store and share your food because 40 percent of food in America is never eaten.
